Egg Curry

After all sweets & veg days, started again to our spicy yet healthy dinner..
Egg curry..with no coconut.
Onion- tomato gravy..with 2 teasp oil only. After frying, all oil comes on top.



Method:

2 onions, 2 tomatoes, mint, coriander, ginger garlic.... all grind together in chopping attachment in food processor... Not fine paste, but rough paste.
Fry this masala well as all ingredients r raw.

Add masala( I use kolhapuri masala) & garam masala powder.
Add water, salt & boiled eggs. Cook for some time
